El calentado, pronunciado como calentao, dicho de paso, muy costeño, es una comida latinoamericana originaria de Colombia, que se prepara con sobrantes de comidas que no se consumieron el día anterior, y se calientan para el desayuno, acompañado con huevos, arepas, agua de panela, chocolate y hogao. El calentao es popular en toda Colombia, especialmente en la Región Paisa, Antioquia, la Costa Caribe y Bogotá. El origen de su nombre procede de la acción de calentar los restos de comida, más, cuando se han hecho, fríjoles, lentejas, garbanzos, de la noche anterior, y para el desayuno. Mi caso de hoy, de ayer tenía lentejas y que mejor uso que compartirles a ustedes uno de los desayunos más completos de mi Costa Caribe, El Calentao...! Vamos y les cuento como lo hice y como lo disfruté...!

  2. 1 taza lentejas guisadas de ayer
  3. 6 rajas chorizo español
  4. 1/2 pimentón rojo
  5. 1/2 cebolla morada
  6. 2 dientes ajo
  7. 1 puñado cebollín chino
  8. al gusto Sal
  9. 1 huevo frito, yema suave
  10. Orégano, paprika y queso parmesano
  11. 1 cda. aceite de oliva
  12. al gusto Tabasco

Instructions to make to make CALENTAO De Colombia...!

  1. Picamos los vegetales en cuadritos, el ajo en láminas y las rajas de chorizo.
  2. En una sartén amplia, añadimos 1 cucharada de aceite de oliva y pochamos cebolla, pimentón y cebollín, pizca de sal...
  3. Continuamos cocción fuego medio, agregamos el chorizo y el ajo laminado, mezclamos...
  4. Adicionamos la taza de lentejas cocidas, mezclamos, continuamos cocción...
  5. Mezclamos bien, rectificamos sabor...
  6. Añadimos la taza de arroz blanco, y un puñado de cebollín chino...
  7. Mezclamos, rectificamos sabor, apagamos fuego y tapamos hasta el momento de emplatar.
  8. Preparamos el huevo, 1 por persona, en un sartén añadimos 1/2 cda. de aceite de oliva y cascamos el huevo con cuidado para no partir la yema, cocinamos a fuego bajo, agregamos al gusto sal, orégano y cebollín chino.
  9. Emplatamos, servimos 1 porción de arroz preparado y con la espátula aplanamos, encima colocamos el huevo, salpicamos queso parmesano y paprika.
  10. Observamos.....!
