Es una receta de Paulina Cocina , siempre quise hacer guiso de lentejas y que quede así , con esa consistencia, oscura y que las lentejas no se pasarán! Con está receta quedó como siempre quise , no tengan miedo de poner las lentejas crudas , siempre usen lentejas de buena calidad para que no sea taaanta la cocción. Y en la receta original lleva chorizo colorado, hay que cortarlo en rodajitas y hervirlo antes para desgrasarlo y agregar al guiso junto con la panceta y la carne. - 150 grs panceta
- 150 grs carne(en mi caso use aguja s/hueso o pued ser r.beef)
- 1 cebolla grande
- 2 dientes ajo
- 1/2 morrón rojo
- 1 tomate
- 4 papas medianas
- 1 zanahoria mediana
- cantidad necesaria Agua caliente
- Condimentos (sal, pimienta, pimentón, ají molido, orégano)
- 400 grs lentejas
Steps to make to make Guiso de Lentejas
- En una olla caliente, sin nada agregar la panceta cortada en tiritas, no tocar. Cuando empezamos a escuchar que se está fritando, revolver dejar 3 minutos y retirar de la olla.
- En la misma olla, caliente y sin agregar nada, ponemos la carne cortada en cubos medianos. Removemos un poco y cuando vemos que ya está sellada la carne, retirarla de la olla.
- Otra vez, en la misma olla, con esa base de la panceta y la carne, colocar la rejilla y el morrón cortados en cubitos pequeños y el ajo picado. Agregar sal y revolver hasta que la cebolla se ponga transparente.
- Agregar el tomate cortado en cubitos seguir revolviendo, cuando vemos que el tomate se pone de un rojo más oscuro, agregar la carne y la panceta que teníamos separadas. Agregar las papas cortadas en cubos medianos, las zanahorias en rodajitas no muy finas, las lentejas esrecurridas (crudas, con previo remojo de 3horas), los condimentos, el puré de tomate, y agregar el agua caliente hasta que quede todo tapado por el agua. Y dejar cocinar por 20 minutos a fuego bajo.
- Ir revolviendo y agregar agua caliente si es necesario, que quede todo siempre tapado de agua pero no "nadando" en la olla. Cocinar hasta que las lentejas estén tiernas, 50/60 minutos.
- Un súper tip que me funcionó es cocinarlo al medio día y dejarlo en la olla hasta la noche. No saben lo rico que queda !!
